Ingredients
- 2 boneless, skinless chicken breasts, cut into 1.5-inch pieces
- 2 medium zucchinis, sliced into ½-inch half-moons
- 1 cup cherry tomatoes, halved
- ½ red onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- ½ teaspoon dried basil
- ½ teaspoon smoked paprika
- ¼ teaspoon red pepper flakes (optional)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup shredded mozzarella or crumbled feta cheese
- ¼ cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (optional garnish)
Instructions
- Preheat the Oven: Preheat oven to 400°F (200°C) and line a large sheet pan with parchment paper or grease with olive oil.
- Prepare the Ingredients: In a large bowl, combine chicken, zucchini, cherry tomatoes, red onion, garlic, olive oil, oregano, basil, paprika, salt, pepper, and red pepper flakes. Toss until evenly coated.
- Assemble on the Pan: Spread the mixture in a single layer on the sheet pan. Top with mozzarella and Parmesan cheese.
- Bake: Bake for 25–30 minutes, or until the chicken is cooked through (internal temperature 165°F) and the cheese is golden.
- Optional Broil: For a crispier top, broil for the last 2–3 minutes.
- Garnish and Serve: Remove from oven, garnish with fresh parsley and lemon wedges if desired. Serve warm.
Notes
Avoid overcrowding the pan to ensure roasting instead of steaming. Fresh zucchini is preferred over frozen for better texture. Add kalamata olives or artichoke hearts for extra Mediterranean flavor.
