Ingredients

  • 34 medium carrots, peeled into ribbons
  • 1 tsp fresh grated garlic
  • 1/2 tbsp toasted sesame oil
  • 1 tbsp rice vinegar (or apple cider vinegar)
  • 1 tbsp fresh lime juice
  • 1 tbsp maple syrup or honey
  • 1 tbsp low-sodium soy sauce or coconut aminos
  • Pinch of sea salt
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp sliced green onions
  • 1 tbsp sesame seeds
  • Optional: chili oil or red pepper flakes for spice


Instructions

  1. Prep the Carrots: Use a vegetable peeler to shave carrots into thin ribbons. Place in a large bowl.
  2. Mix the Dressing: In a separate bowl, whisk sesame oil, rice vinegar, lime juice, maple syrup, soy sauce, grated garlic, and salt until well combined.
