This Rainbow Fried Rice (one-pot rice cooker recipe) is a colorful, cozy, and quick dish that comes together effortlessly in a rice cooker. Packed with vibrant vegetables, protein, and savory sauces, it’s perfect for lazy days when you want something healthy, hearty, and delicious without any frying or fuss.
Ingredients
- 1 cup jasmine rice
- 1 cup water (or amount indicated on your rice cooker)
- 1 tbsp onions or shallots, minced
- 1 tsp garlic, minced
- 2 tbsp carrots, diced
- 2 tbsp broccoli, chopped
- 2 tbsp cherry tomatoes, halved
- 2 tbsp sweet corn
- 2 tbsp cauliflower, chopped
- 100g boneless chicken breast or thighs, diced (optional)
- 1–2 eggs
- 2 stalks spring onions, for garnish
- Seasoning Sauce:
- 1 tbsp light soy sauce
- 1/2 tbsp dark soy sauce
- 1/2 tbsp oyster sauce
- 1/2 tsp sesame oil
- 1/4 tsp ground white or black pepper
Instructions
- Wash the Rice: Rinse jasmine rice thoroughly until the water runs clear. Add to the rice cooker pot and top up with 1 cup of water or per your rice cooker’s guide.
- Stir in Aromatics: Add minced onions and garlic to the rice. Stir to mix evenly.
- Add Veggies and Protein: Layer your chopped vegetables on top. Add chicken if using. Crack 1–2 eggs over the top—do not mix.
- Cook: Close the lid and cook on the normal white rice setting. Let the rice cooker do the work.
- Mix the Sauce: While cooking, mix light soy sauce, dark soy sauce, oyster sauce, sesame oil, and pepper in a small bowl.
- Combine and Serve: Once rice is cooked, carefully open the lid (watch the steam!). Pour in the sauce, break up the egg with a rice paddle, and stir everything well. Garnish with spring onions and serve warm.
Notes
Use small, evenly diced vegetables for even cooking. Avoid mixing raw egg or sauce directly with rice before cooking. The sauce is best added at the end to preserve flavor. This recipe is flexible—swap veggies or proteins based on what you have on hand.
