Description

This One Pot Chicken Alfredo Pasta is a creamy, cheesy, one-pan wonder that combines tender chicken, perfectly cooked pasta, and rich Alfredo sauce in under 30 minutes. It’s the ultimate comfort food for busy weeknights or casual gatherings.

Ingredients

  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts, diced
  • 2 cloves garlic, minced
  • 2 cups penne pasta (or fettuccine)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Sear the Chicken: Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add diced chicken and cook until lightly golden, about 4–5 minutes.
  2. Add Garlic: Stir in minced garlic and cook for 30 seconds until fragrant.
  3. Combine Pasta and Liquids: Add uncooked pasta, chicken broth, and heavy cream. Stir well to combine and bring to a gentle boil.
  4. Simmer: Reduce heat to low, cover, and cook for 12–15 minutes, stirring occasionally, until pasta is al dente and sauce has thickened.
  5. Finish the Sauce: Stir in Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  6. Serve: Garnish with fresh parsley and serve hot.

Notes

For extra flavor, sear the chicken in butter instead of oil. Stir the pasta often during cooking to prevent sticking. Add a splash of broth or cream when reheating leftovers to restore creaminess.
