Ingredients
- 2 tablespoons olive oil
- 2 boneless, skinless chicken breasts, diced
- 2 cloves garlic, minced
- 2 cups penne pasta (or fettuccine)
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Sear the Chicken: Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add diced chicken and cook until lightly golden, about 4–5 minutes.
- Add Garlic: Stir in minced garlic and cook for 30 seconds until fragrant.
- Combine Pasta and Liquids: Add uncooked pasta, chicken broth, and heavy cream. Stir well to combine and bring to a gentle boil.
- Simmer: Reduce heat to low, cover, and cook for 12–15 minutes, stirring occasionally, until pasta is al dente and sauce has thickened.
- Finish the Sauce: Stir in Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
- Serve: Garnish with fresh parsley and serve hot.
Notes
For extra flavor, sear the chicken in butter instead of oil. Stir the pasta often during cooking to prevent sticking. Add a splash of broth or cream when reheating leftovers to restore creaminess.
